High Vaccuum Pork tenderloin BasqueStage Candidate Post


Hey! How is it?

As it turns out i Have been chosen for the final round of selection for the Rising Star Scholarship de BasqueStage and as part of the selection process I am being asked to prepare a step-by-step post of the preparation of a dish. So I'm gonna leave my BasqueStage Candidate Post...Hope you enjoy it!
I chose this preparation that I made just this Sunday for my dad's b-day!
My mom brought some espectacular Pork Tenderloins, which frankly looked beyond awesome. So having a fairly fat-free piece of meat and because I had to take it to full cooking (because it was pork), I decided to cook it this potencializing way...what does it potentialize? Color, Flavor and aroma. Besides it helps in the conservation of the meat and its juices.
Well, the first thing I prepared was an adobo with (tomato, guajillo pepper, garlic and onion) and with the portioned tenderloin I proceeded to completely cover the loin with the adobo

After that I arranged them in the vaccum bag...

Then I set water to heat at approximately 70-73 degrees C and cooked the pork for about an hour and a half ( I do not own a SousVide machine, but it is very easy to monitor temperature if you have a good thermometer with an alarm.

When it is fully done, you proceed to sear the loin in very hot oil, then deglace with Orange juice. add some half and half cream strain it and you have a magnificent sauce for the dish. I served it with some homemade onion rings and a "Croqueta"of potato and rice with 3 or 4 asparagus tips sauteed in butter. This is what the plate looked like




And well, here's the recipe!
High Vacuum Adobado Tenderloin

2 pork tenderloin scallops
10 guajillo peppers
5 tomatoes
1/4 onion
2 garlic cloves
salt
pepper

First you have to prepare the adobo by hydrating the guajillo peppers and then liquifying with the onion, tomato and garlic. Then marinate the loin in the adobo, and put it in the vacuum bag. Heat water to 70-73 degrees and maintain constant heat. Cook the loins approx 1 and a half hour. Sear in very hot oil when ready to serve.

Tip: This cooking method is excellent for storing tou loins, store it already cooked and when ordered just sear it during service for nicer color, texture and heating.

¿Que tal?

Pues resulta que estoy en la ultima ronda de selección para la Beca Rising Star de BasqueStage y como parte de los requerimientos me solicitan que haga un "step by step" de una receta que haya preparado. Asi que aqui les voy a dejar el BasqueStage Candidate Post...Espero lo disfruten.
Elegí esta preparación que hice justo este fin de semana por el cumple de mi papa.
Trajeron para la cena unos filetes de puerco que se veian francamente increibles, así que por ser una carne magra y tener que llevarla a termino de cocción (por ser puerco), decidí cocinarla de esta forma un tanto novedosa, pero que yo definiria como potencializadora, ¿de que? Sabor, Color, Aroma. Ademas conserva la carne de una manera excepcional.
En fin, lo primero que hice fue un adobo. (Tomate, Chile guajillo, Ajo y Cebolla) y con  el lomo porcionado lo cubri completamente con el adobo

Despues los acomodé en la bolsa de vacio...

Despues lo puse a cocer a una temperatura de unos 70°-73° C por aproximadamente 1 hra y media. (Yo no tengo una maquina SousVide, pero facilmente puedes monitorear la temperatura del agua con un termometro.)


Al final se sellan los medallones de filete en aceite de olivo y se deglasa con jugo de naranja abundante. Se agrega nata al jugo y se cuela para usar como salsa. Yo los serví con una croqueta de arroz y papa y unos aros de cebolla caseros, ademas de unos esparragos salteados. El plato se veia mas o menos asi:


Bueno aquí les va la receta:

Filete al Vacio con Adobo de guajillo

2 medallones de filete
10 chiles guajillo
5 tomates huaje
1/4 cebolla
2 dientes de ajo
sal
pimienta

Primero hay que preparar el adobo, hidratando los chiles y moliendo con el tomate, ajo y cebolla cruda. Despues los medallones se marinan y se meten a un bolsa de alto vacio. Tener agua a 70-°73° Y cocerlos aproximadamente una hora. Despues Sellar en un sarten con aceite muy caliente.


Tip: Este metodo de cocción es excelente para almacenar tus filetes. Los guardas ya cocidos y nada mas al momento de emplatar lo sellas y sirves.

Amor y RibEyes/ Love and RibEyes

Qué tal? Primero que nada una disculpa por haberme ausentado tanto tiempo. He estado vuelto loco, con el trabajo, la escuela y todo lo demas, pero por fín tuve la oportunidad de sentarme a dejarles unas lineas mas.
Dejenme contarles algo que pasó hace una semana y que tiene que ver con mi vida. Pues resulta que cumplí 2 años con  mi novia y decidi que era el tiempo de hacerlo, le compré un anillo de promesa (falta $$$$$ para darle el de compromiso) y le monté una serie de regalos que pensé que le gustarian, primero con la ayuda de mi amigo David Cantú compuse una canción y le hice un video con muchos momentos felices que he pasado con ella. Ademas le preparé una cena de aquellas! Ensalada de Radicchio, Iceberg y congele supremas de citricos (Naranja, toronja, y limon) ademas de una vinagreta con los mismos cítricos. Sencillo pero delicioso. El plato fuerte fue un Robalo a la plancha con salsa de chipotle, acompañados con Portobellos rellenos de su risotto (A mi novia le encantan los hongos). El postre fue el tradicional pay de queso (Hecho por la chef Repostera de la casa mi Madre :) acompañado de un coulis de frutos rojos y vino tinto.

Le puse el video y despues fingí que habia olvidado algo de postre y regresé con el anillo "emplatado." Le expliqué lo que significaba el anillo de promesa y lo aceptó. Reiterandome la promesa que yo le hice. En fin, creo que no ha habido nada que me haya hecho tan feliz en toda mi vida. Mi momento mas feliz habia sido unos minutos antes cuando ella me dio su regalo y resulto ser una playera de el equipo de futbol al que yo apoyo :).

En fin al final les dejo el video que le regalé.

Ahora vamos a la parte de la comida. Si me conoces sabes que me encanta la carne. Antier tuve mi examen de la materia de Carnes Rojas, y preparé este plato: una "Tampiquena de RibEye"Pues básicamente la tampiquena es un plato que se prepara con sabanita de res, se sirve con una enchilada, guacamole o frijoles y con rajas guisadas con elote, y crema. Decidi cambiarle a este tradicional plato mexicano la sabanita por este RibEye de 1 lb que francamente estaba HERMOSO. Ademas con el adobo de guajillo que prepare para la enchilada, tambien mariné el Rib Eye antes de parrillarlo.

Rajas con Elote.
1 chile poblano
1/4 cebolla
lata pequena de elote amarillo
crema

Quemar y despielar el chile, despues cortar la cebolla y el chile en rajas delgadas. Guisarlo con un poco de aceite de olivo y agregar el elote, dejar que dore, apagar e inmediatmente agregar  100 m/L de Crema. Mezclar bien y servir.

Enchilada Regia
Tortilla
Queso Panela
Cebolla
Chile guajillo
Ajo
Cilantro
Tomate huaje

Para el Adobo:
hidratar los chiles y licuar con la cebolla, ajo, tomate y cilantro crudo. Sumergir la tortilla y freirla en abundante aceite, rellenar de queso panela fresco y cebolla.

Tomate
Cebolla
Limon
Aceite de Oliva
Aguacate
Machacar completamente el aguacate y mezclar con cebolla y tomate finamente picada, agregar el jugo de medio limon (previene oxidación ademas de dar mucho sabor.) y unas gotas de aceite de oliva. Sal pimentar. Servir con totopos quemados al fuego.

RibEye

Marinar en el mismo adobo, calentar aceite en un sarten casi a que se queme y se llar la carne, inmediatamente parrillar al termino deseado. Servir con unos cristales de Sal de Mar.

Hi there! First of all, I owe my reader's an apology, because of my long absency. I've been runnning around like crazy, between 2 jobs, school and life I'm swamped. Finally I have the time to stop by to leave a few lines for everyone out there. I'll start off by telling you guys about something that happened approximately a week ago. Turns out I have my 2 year anniversary and I decided it was time to do it, so i bought her a Promise Ring (there's still $$$$$$$$$$ missing before I can give her a proper engagement ring) and set up different presents that I thought she'd like, first of all with the help of my friend David Cantú I composed a song and made a video with a lot of happy moments that I've spent with her. Also I prepared a dinner for her that I'm sure she'll not soon forget. Radicchio and Iceberg salad with citric vinaigrette and frozen orange, grapefruit and lime supremes. Simple but delightfu. the entree was Sea bass with a chipotle sauce accompanied by a Portobello mushroom filled with a rissotto made with different kinds of shrooms (My girlfriend absolutely LOVES mushrooms). For dessert the traditional cheesecake (Preparde by the Patissier of the house, my Mother) with a red fruit and wine coulis. 

After dinner I played the video and pretended that I had forgotten a part of the dessert, so I went into the kitchen and "plated"her ring. I explained the meaning of the ring and she accepted it, taking as her's my promise. I think nothing has ever made me so happy as that moment. The previous happiest moment had been maybe 5 min earlier when se gave the soccer jersey of my favorite team.

Let's get on subject with the food! If you've met me you know i absolutely and totally LOVE meat! ( if you dont then now you do.) The day befor yesterday I had my Red Meats practical test, for which I prepared a "RibEye Tampiquena"Basically the tampiquena is a very thin piece of meat served with an enchilada, some rajas with elote and either guacamloe or fried beans. So I decided to make this special Mexican plate but substituing the "sabanita"(thin piece of meat) with a beautiful 1lb RibEye which I marinated in the adobo I made for the enchilada.

As you can see, the plate was delicious as well as beautiful. I hope you like it. Recipe is below

Rajas con Elote.
1 poblano pepper
1/4 onion
cmall can of rellow corn
halfcream

Burn in open fire the poblano and then put it in a plastic bag to sweat so you can peel it off. Sautte it with the onion and then add the corn, let it toast for a while, turn off fire and add the cream. Mix and serve.

Tortilla
Panela Cheese
Onion
Guajillo pepper
Garlic
Cilantro
Tomato

Hidrate the guajillos and liquefy with the RAW garlic, tomato  onion and cilantro. submerge the tortilla in it and fry it in abundant oil. Fill with cheese and onion

Lime
Olive Oil
Avocado
Completely mash the avocado and mix some finely diced onion and tomato. add the juice of half a lime and wome drops of olive oil. Salt and pepper. Serve it with burnt totopos

RibEye

Marinade in the enchilada adobo. Heat oil in a pan until it is almost burnt (REALLY HOT) sear the rib eye and then grill it to taste. When plating remember to add some crystals of sea salt.
