High Vaccuum Pork tenderloin BasqueStage Candidate Post


Hey! How is it?

As it turns out i Have been chosen for the final round of selection for the Rising Star Scholarship de BasqueStage and as part of the selection process I am being asked to prepare a step-by-step post of the preparation of a dish. So I'm gonna leave my BasqueStage Candidate Post...Hope you enjoy it!
I chose this preparation that I made just this Sunday for my dad's b-day!
My mom brought some espectacular Pork Tenderloins, which frankly looked beyond awesome. So having a fairly fat-free piece of meat and because I had to take it to full cooking (because it was pork), I decided to cook it this potencializing way...what does it potentialize? Color, Flavor and aroma. Besides it helps in the conservation of the meat and its juices.
Well, the first thing I prepared was an adobo with (tomato, guajillo pepper, garlic and onion) and with the portioned tenderloin I proceeded to completely cover the loin with the adobo

After that I arranged them in the vaccum bag...

Then I set water to heat at approximately 70-73 degrees C and cooked the pork for about an hour and a half ( I do not own a SousVide machine, but it is very easy to monitor temperature if you have a good thermometer with an alarm.

When it is fully done, you proceed to sear the loin in very hot oil, then deglace with Orange juice. add some half and half cream strain it and you have a magnificent sauce for the dish. I served it with some homemade onion rings and a "Croqueta"of potato and rice with 3 or 4 asparagus tips sauteed in butter. This is what the plate looked like




And well, here's the recipe!
High Vacuum Adobado Tenderloin

2 pork tenderloin scallops
10 guajillo peppers
5 tomatoes
1/4 onion
2 garlic cloves
salt
pepper

First you have to prepare the adobo by hydrating the guajillo peppers and then liquifying with the onion, tomato and garlic. Then marinate the loin in the adobo, and put it in the vacuum bag. Heat water to 70-73 degrees and maintain constant heat. Cook the loins approx 1 and a half hour. Sear in very hot oil when ready to serve.

Tip: This cooking method is excellent for storing tou loins, store it already cooked and when ordered just sear it during service for nicer color, texture and heating.

¿Que tal?

Pues resulta que estoy en la ultima ronda de selección para la Beca Rising Star de BasqueStage y como parte de los requerimientos me solicitan que haga un "step by step" de una receta que haya preparado. Asi que aqui les voy a dejar el BasqueStage Candidate Post...Espero lo disfruten.
Elegí esta preparación que hice justo este fin de semana por el cumple de mi papa.
Trajeron para la cena unos filetes de puerco que se veian francamente increibles, así que por ser una carne magra y tener que llevarla a termino de cocción (por ser puerco), decidí cocinarla de esta forma un tanto novedosa, pero que yo definiria como potencializadora, ¿de que? Sabor, Color, Aroma. Ademas conserva la carne de una manera excepcional.
En fin, lo primero que hice fue un adobo. (Tomate, Chile guajillo, Ajo y Cebolla) y con  el lomo porcionado lo cubri completamente con el adobo

Despues los acomodé en la bolsa de vacio...

Despues lo puse a cocer a una temperatura de unos 70°-73° C por aproximadamente 1 hra y media. (Yo no tengo una maquina SousVide, pero facilmente puedes monitorear la temperatura del agua con un termometro.)


Al final se sellan los medallones de filete en aceite de olivo y se deglasa con jugo de naranja abundante. Se agrega nata al jugo y se cuela para usar como salsa. Yo los serví con una croqueta de arroz y papa y unos aros de cebolla caseros, ademas de unos esparragos salteados. El plato se veia mas o menos asi:


Bueno aquí les va la receta:

Filete al Vacio con Adobo de guajillo

2 medallones de filete
10 chiles guajillo
5 tomates huaje
1/4 cebolla
2 dientes de ajo
sal
pimienta

Primero hay que preparar el adobo, hidratando los chiles y moliendo con el tomate, ajo y cebolla cruda. Despues los medallones se marinan y se meten a un bolsa de alto vacio. Tener agua a 70-°73° Y cocerlos aproximadamente una hora. Despues Sellar en un sarten con aceite muy caliente.


Tip: Este metodo de cocción es excelente para almacenar tus filetes. Los guardas ya cocidos y nada mas al momento de emplatar lo sellas y sirves.
